We are  pleased to release the 2007 Chardonnay from the Library and to offer a special vertical of 2007, 2008 and 2009. 

Farmed naturally and organically, the Chardonnay vines are hand-tended and the fruit is hand-harvested. The wine is naturally fermented in large French oak barrels by the indigenous yeast and bacteria that live in the vineyard (our secret sauce). Fermentation is long and slow, taking 10-12 months to complete.

Tasting Note (2019):  Cellar aged for 12 years, the wine in youth was very structured and tight.  With time it has added generous curves to a fine, supporting architecture. Nutty, toasty aromas with a dash of white pepper sit elegantly on a warm citrus fruit bed. Flavours of honeycomb, meal, flint and oak are harmonious and textural supported by a supple structure that is elegant and sublime.

A fine-grained Chardonnay with a linear palate that leads to a lingering finish. The wine shows a lot of winemaking influence with classy oak, nutty yeast lees and sizzled butter characters that dominate citrus fruit flavours.
