Hand harvested 8 April at 24º Brix the fruit was chilled, whole bunch pressed and held in tank overnight. The juice was transferred into tight grained French oak barriques for fermentation by indigenous yeasts. 20% of the oak was new.
Following battonage for six months and partial malolactic fermentation the wine was left to settle for an additional five months before bottling.

Tasting Note:
The hand harvested grapes for the 2007 vintage came from two distinct Belsham Estate vineyards in Marlborough. The resulting wine is a full bodied style that expresses succulently ripe fruit framed with toasty, creamy notes. The wine’s underlying structure is elegant yet very focused and present. After a year in the making, the wine is cellared for two years in bottle prior to release. Drink now thru 2018.
